I was trying to substitute TFA Red Oak that I usually use in a recipe (3%) with FA Oak Wood.

The taste was different then what I'm used to, less woody and more fruity.

Would adding FA black fire (or maybe something else) make it more like the TFA Red Oak?
What would be the recommended % for the FA Oak Wood?

FA Black Fire at 0.25, to 0.5% will make it smokey/ashy. Over that, get ready for a BBQ. Wear gloves, that stuff is strong and difficult to wash off, LOL.
