Yes, it should work. SS316L is all I use for coils now. How many wrap will depend on what you want the final resistance to be. If you haven't already, go to this site, http://www.steam-engine.org/coil.asp you can input your parameters in the fields and it will tell you how many wraps.
0.169 with 7 wraps @ 2.5mm
0.189 with 8 wraps @ 2.5mm
0.210 with 9 wraps @ 2.5mm
This isn't to be taken as gospel, but just to give you some ballpark figures.
And it's the total for 2 coils. Each individual coil will be double those numbers, of course.
