I did some trading and ended up with a Apollo that is what they call metallic red. It sure looks pink to me. What is the best way to strip the paint of?

The easy straight forward answer is to wetsand it off using 150-220g.
without knowing what they used to coat it I can't rightfully suggest any one chemical/solvent. However,if you're down to try a couple I would suggest acetone first and if that doesn't do anything than you'll need something stronger. The problem is that some of the more aggressive strippers will also discolor the stainless underneath. If the acetone doesn't touch it then you can try dot3 brake fluid wich won't harm the SS.
after those it's onto oven cleaner or even aircraft stripper both of wich will discolor the SS.
if you do end up with some discoloration you can go back with light scotch brite to bring it back to a brushed finish.

Personally,I would start by trying to chip as much off as possible or wetsanding.

Also,The dot3 will take a few hours to attack the coating. The acetone should start to attack it immediately if it's going to do anything and the aircraft/oven cleaner will also attack the copper so be sure to remove those prior to trying these if you go that far.

Ok,I just looked at a small pic online and assumed it was SS.
The oven cleaner will deffinatly discolor aluminum. The aircraft stripper is made specifically for this so that's what I would go with if the others don't do the job.

Auto parts stores will have the aircraft for around $10 a can and is more than enough to do multiple mods.

Carburetor cleaner. Cost maybe $3 a can at an auto parts store. Take the can and spray it into a glass. Drop your parts into the glass and let it sit. Come back in 6 hours or so and you'll see that the paint will start to bubble. Give it a good wash, possibly going over the paint lightly with an SOS pad. Repeat as necessary.
