I've been steeping at F140 degrees, low setting on crockpot lid cracked, but I was wondering if there is a correct temperature? What's your crockpot steeping regiment?

I've taken my juice out of a 4hour steep in my crockpot, shaken them vigorously, what's next? Is it ready to go? Should I let the juice mellow out for a few hours? Or take the cap off and let it oxidize overnight? What do you guys do? Does it matter?
