2 lbs of 80-20 ground beef rolled around 1/2 lb of sliced provolone and 1/2 lb smoked gouda wrapped in 1 lb of Hormel bacon on the smoker for about 2 1/2 hours at 225 degrees. I used pecan wood since it's plentiful here but any hardwood will do. Fruit woods such as Apple or Cherry work great. Of course if you can get it, it's hard to beat the old standard, hickory.
