After torching a SS mod can it be SS again if you don't like it?

yes and no... depends on how much you torched it.. I have torched a nimbus clone and managed to sand it off after just to retorch it... a long process and a lot comes into play.. my advice is to buy some stainless steel pipe and give it a go with the torch.. practice being consistent with what colors come out.. and of course post pictures!

A couple things come into play. Torching itself is permanent on what gets torched. If you are torching a thick piece of SS, you can maybe sand down to original color but it will take a while. With a mod or atty, the metal is typically so thin that there is a good chance that no matter what you do the color will be altered all the way through. Perhaps not if you only get to the golden colors, but if you're into purples and blues the metal has likely been heated all the way through.
If you are really unsure or truly care about the mod you're thinking about torching, get a piece of stainless and test it there first. Also a little tip, if you want to be more precise use a lower flame on your torch. It will take longer but also much more gradually shift through the colors once approaching temp. HTH.

I don't think it looks that bad. You can even it out a bit. Remember you can put more heat to it and change the color. Give it a good cleaning and blast it nice and evenly to purple. Think it would look great.

You can always go back to shiny or brushed. The coloring is a thin oxide layer.
If you couldn't nearly every piece of steel would be colored, especially tools and knives. You may have to re-heat-treat it to get it to a consistent color and hardness to get a consistent finish.
Rather than a torch I'd suggest a pan of sand instead of direct heat, or an oven/kiln. Here's a good color/temperature chart, http://www.anvilfire.com/article.php?bodyName=/FAQs/temper_colors_hardness.htm
Depending on the torch and metal composition you could run the risk of carburizing with direct flame. If you do that you're on your own.
