Best recipe for crock pot steeping

I'm looking to discover the best recipe for steeping and I decided that I need to buy a crock pot. I'm interested in this one:

The thing I don't understand is how crock pot are heating and if I can set a static temperature. For example I'm interested to buy the one above from amazon since it has digital countdown timer, two level of heating low and high and also an automatic keep warm function. Yes I will use it to make food as well haha. :)

From what I read on the product description this crock pot will start heating until it will reach 212 degrees. On low settings it will get there slower and on high settings faster obviously.

However from what I read on the forum the recommended temperature for steeping using suck a crock pot is about 122 degrees. So, how can I work with this one? Do I need to keep an eye on the crock pot so I can stop it at 122 degrees or what? :D

@AmandaD is our resident crock pot authority and she will be along shortly I'm sure. Basically you will need to crack open the lid to keep the temp around 150 degrees F for around four hours and this is not for fruit flavors in most cases. I'm from the old school time in darkness camp.

I've used two different crockpots (one big, one small), although I generally use the little $10 crockpot! Both of them keep the temp at around a perfect 150 degrees on the lowest setting with the lid cracked.

As gopher_byrd says, I really only use it for custards (like Caps) or tobaccos. You can fade fruit and spices, although an hour or so doesn't hurt fruits (that I've found). But I rarely use it anymore, since most things I make seem to be ready in a couple of days (probably due to the low percentage of flavoring).

I get mine to 150 and have it plugged into a cheap timer for 2 hours, it shuts off and I let it sit and cool until the next day. This seems to work pretty good for me.

I have a cheap espresso thermometer that works great for the temp, crock pot I bought at target for 13 bucks hi and low. On the low setting it will sit around 150 with the lid cracked.

I use a crock pot and magnetic stirrer for making juice and it rarely needs steeping.
I heat my flask in a bain marie with the flask on a stand inside the crock pot.
Have found that if I keep the lid off it stays at a constant 140 degrees F.
even if left on all night long.
