Most of the reviewers say Stainless Steel.

Any ideas on what gauge I should use?

Stainless Steele hands down. Its easier to work with, provides a little more resistance, and you can dry burn it.

I got 26 gauge of 316L and it works great. 6 - 8 wraps on a 2.5mm drill bit.
