Just a request I had come in. I'm not a fan of black currant personally but this turned out really good. The request was for a predominately cream recipe with a strong note of blackcurrant and a coconut backing or finish. This turned into the below (ALL FA!)

  • 2% FA Custard
  • 1.5% FA Vienna Cream
  • 1.5% FA Blackcurrant
  • 1.5% FA Fresh Cream
  • 0.25% FA Coconut
The Blackcurrant could be increased or decreased based on your preference. I would recommend mixing this 20/80 PG/VG (more more VG) if intended for dripping (I first mixed 30/70 and it was a little harsh). Coconut can also be increased or eliminated based on preference.
