Hello and Welcome. Interesting your posting from Texas since I'm about ready to get an 11 pound Brisket (probably 9 now after slow smoking) from my Smoking Pit. Love slow mesquite smoked brisket,cornbread, and beans (with lots and lots of bacon and/or fatback). My fall ritual, spring ritual, summer ritual. Hell, I just love smoked Brisket!

Sounds delicious! You can't be from Texas and not love brisket, it's been a couple weeks since I've had some. BBQ is good anytime of year!

I'm in San Antonio now, but lived in a few places around the state, Galveston, Corpus, Austin...
