Follow the steps to create a customized spicy cookie recipe. Dozens of cookies are possible: Granny's Sugar-Sprinkled Gingersnaps, Oma's Nutty Lebkuchen, Mom's Citrus Molasses Crinkles, Granny's Boozy Spice Drops, and many others. Delicious fun!

STEP 1: Start with 2% FA Cookie. You'll add flavorings to that as you go along.
STEP 2: Choose one baker and add their flavorings.
GRANNY (old-fashioned, mild molasses background): 2% TFA Molasses*
MOM (like packaged cookies): 1% TFA Molasses*, 1% TFA Brown Sugar Extra
OMA (Bavarian honey-lebkuchen style): 0.75% TFA Molasses*, 0.5% TFA Brown Sugar Extra, 0.15%-0.25% FA Honey (very strong flavoring, measure carefully)
GRAMPS (hint of sweet maple): 1.5% TFA Brown Sugar Extra, 0.5% FA Maple Syrup (Thanks to Bryong70 from ecf, who suggested using maple to avoid 'trace custard notes'!)
* NOTE: TFA Molasses includes 'trace custard notes'
STEP 3: Choose 1-2 accents and add the flavorings
SUGAR (sprinkled or glazed effect): 0.5% FA Meringue
SLIGHTLY-BOOZY: 0.5% FA Rum
CITRUS (candied citrus peel): 0.5% FA Lemon Sicily and 0.25% FA Orange
NUTTY: 0.5% total, any combination of FA Hazelnut, FA Nut Mix, FA Walnut, FA Marzipan (better in cookies than plain almond), or others you have
(STEP 4: Gather whichever spice flavorings you'll need for step 5.)
GINGER: NF Organic Ginger is ideal, but you can use any ginger flavoring you have.
CLOVE: TFA Pumpkin Spice or FA Clove work well; you can use any you have.
NUTMEG: TFA Holiday Spice is ideal, but if you have a different nutmeg, that's fine.
CINNAMON: use any that you have in any combination. TFA Horchata Base, TFA Cinnamon Spice, and FA Cinnamon Ceylon have all worked well for me.
ANISE/FENNEL: FA Anise is ideal; TFA Absinthe will also work okay.
CARDAMOM: You can use FA Cardamom in place of part of the cinnamon and/or ginger for a chai-like flavor. If Cardamom is called for, but you don't have it, you can substitute cinnamon, ginger, or a combination.
STEP 5: Choose a spice blend and add the flavorings.
GINGERSNAPS: 0.5% Ginger and 0.5% Cinnamon
MOLASSES CRINKLES (use Granny as your baker): 0.5% Cinnamon, 0.25% Ginger, 0.25% Clove
SPICE DROPS: 0.25% Ginger, 0.25% Cinnamon, 0.25% Nutmeg, 0.25% Cloves, optional 0.25% Anise or Cardamom
BASIC LEBKUCHEN (use Granny or Oma as your baker): 0.5% Cinnamon, 0.25% Clove, 0.25% Nutmeg
FANCY BAVARIAN LEBKUCHEN (use Oma as your baker; use Slightly-Boozy AND/OR Nutty accents) 0.5% Cinnamon, 0.25% Clove, 0.25% Nutmeg, and either 1% FA Cocoa OR the following: 0.25% Ginger, 0.25% FA Lemon Sicily, 0.25% Anise, 0.15-0.25% Orange
DONE! Your recipe should have 5.5-7% total flavoring. You can taste right away, but do not make any changes until your finished mix has aged at least 24 hours. The spice balance and strength will change during that time.
