Just upgraded to a iStick 100w and have a couple questions..

So just upgraded from a vapepen(juicemafia). I have a couple questions... I have a good grasp on what changing W's does but what is the point of changing volts. I know that going to lower W's leads to a lower vape temp(which I like), is there any benefit to messing with the volts? Sorry for the noob question, just want to make sure I have everything right! Thanks in advance!

Two ways of vaping. When you set volts it holds that voltage as long as the mod can with a gradually decreasing battery level by boosting (or decreasing) if necessary. It doesn't take resistance into account, it just delivers that voltage. It will use it to figure the display for the resultant wattage output but not in calculating the voltage. With a wattage setting the mod takes the resistance into account and varies the voltage, boosting (or decreasing) if needed, to whatever is needed to produce the wattage you set. If you change to a different resistance coil it will still manipulate voltage to produce that set wattage. They name it variable voltage but it actually hold's the voltage steady and variable wattage varies voltage to hold the watts steady.

No safety gap. It won't put out more voltage or wattage than the chips limits. With the Istick it just won't let you dial it up. It does technically take resistance into account in figuring those limits, just not in producing the voltage once it's set. Whereas the wattage setting uses it as an integral part of producing the wattage.
