Hey VU,

So I've really been digging this simple Nectarine and Cream I've been mixing up lately, and have been playing with something to add to it to make it a bit more complex. Doesn't need to be sweeter, the nectarine definitely has that covered, but something to round out the creamy flavor would be ideal. So i decided to add 1% Vanillan. Sounds good right? Except it tastes like ground pepper. At first I thought steeping would solve the problem, but after 10 days it's only gotten worse. I get the sweetness on the inhale, but exhale is completely overpowered with this awful bitter pepper taste. Soooooooo anybody know wht's going on here/why this is happening to my sweet nectarine juice?

Is it possibly your nic? Of those flavorings, I don't know why it'd be peppery. On that note, someone recently said they had a vanilla flavor of INW that tasted peppery. Weird!

Well I've only tasted it out of this one bottle with the vanilla, its the same everything else (vg,pg,nic,flavor%)...

Vanillan sorry, damn autocorrect. Flavors are a 2ish months old, but Ive used it plenty of times and never had this happen

No, i wouldn't think it'd be bad in that time frame if it was fine the most recent time you'd used it. Either it's an odd reaction with the other flavors, or something went weird since last use. Maybe mix that flavor only in your normal ratios and see how it tastes on it's own. If it's fine even then, maybe it's a weird flavor reaction. So weird.

Thanks Huck! I am kinda at a loss as well, perhaps it just isn't the right addition to the mix. More tests will be done, and I'll let you know if something new arises!

I've heard that some people may tend to get a peppery taste from vanillas. Genetics possibly?

I'm no doctor, but I don't see how a persons genetic code relates to their taste buds, but either way it's not just me tasting the pepper. Everyone who tries is gets this awful pepper taste. So its the flavors causing that pepper, not my genes...

Neither am I, but it's a commonly researched and studied fact that genes play a large part in taste perception. You didn't mention in the original post that everyone also tastes the peppery affect, so I was left to assume it was only tested by you.

I've never detected a peppery effect from Vanillin before, so that's a good thing I guess.
Drip taste directly from the bottle i get some tho.

Like RP said above, I'd try some other Vanilla flavors.

I like these better than the plain Vanillin anyway.

I like FA Vanilla Classic, if you've got that one. I also have the 3 that Heabob mentioned, and like them fine.

This is kind of tangential, but what's the deal with vanillan vs ethyl vanillan? Is one substantially different than the other? I've heard that ethyl v. is sweeter, but that's all I know. And I only have ethyl vanillan.
