Both....... Nichrome or Kanthal If using Unregulated mods, mostly. Stainless for mostly regulated vaping.
I would get SS but why are you stocking up on wire? Do you think the FDA is going to stop the sale of Wire? That's the last thing you need to worry about!

Why do you say that, can't think of a single reason why SS would be mostly for Regulated vaping.
Pretty much all I run is SS fused Claptons on Mech's.

Stainless, works on whatever you want to run, doesn't degrade, not too malleable (bend easy).
That's why I like SS, I can use it for both. Very versatile.
My favorite is 317L, works very well. I've tried 321, 304 and 430, they all have an off taste to me. 317L is just a bit higher resistance than 316L so I prefer it as my core wire for my fused Claptons. 316L I can get in the smaller gauge (34-44) so I use that for my wrapping wire. SS fused Claptons are flavor monsters!

I'm not stocking up because of FDA or anything I meant it more like making a big order of wire since all I have is kanthal and ni200 and want to get all different gauges of stainless or ni chrome or maybe both

Me I'm stocking up on smaller gauge SS. I love SS fused Claptons and a little voice in me says that quality SS wire in the smaller gauge wire may get difficult to find. I very well may be wrong, if so then I won't have to buy wire for a long time, but if I'm not...
For me it's just a bit of insurance.

For 22-32 I'm building up a stock of around 300ft each. Then 34-40 2000ft each, both SS & Kanthal. I spin wire for friends and family so I'll use it, but if the shit hits the fan and it does start drying up I'm set. More than likely wire won't be an issue, but I seriously wouldn't put it past the Stool Samples in Government to screw with it. Hell in my State buying canned air for your computer is regulated, I shit you not.

@ro55co, sounds like here. Don't think canned air is regulated so much but thanks to the m*th heads it's a pain in the ass getting sudafed. They look at you funny, quiz you, ask for id and you're limited to one or two packs at a time per sale. Makes it real fun when you have a cold.
