Now that's an impressive figure - at $26,000 in monthly sales and the bulk of it coming from liquid that wholesales around $4 and retails at $12 (300% markup, more if you consider house juice), I'd peg gross profits at close to $14,000 a month. Even shaving $3000 for rent, utilities, and shop upkeep, $11,000 is pretty decent if you figure you've got 3-4 part time low wage workers pulling down maybe $1200 a month and as an owner you're pocketing the rest.
