If I'm not wanting to do any "extra stuff" to the standard coils I want to build using 26ga Ni200 for temp control, would I want Tempered or annealed Ni200? The cost is double for Tempered. Why spend the extra if I don't have to? Please tell me which I should go for with a brief explanation why. Thanks so much.

Tempered is hardened and will be easier to work with. Nickel is very soft, and the coils easily go out of shape!

I personally use annealed because I think it's easier to get the spacing in the coils right

That's another reason, why I prefer using SS, over any other wire for TC, plus I can use the coils in Power mode, on my Power mode only mods.
