I can't for love nor money replicate the sweetness from an old favourite 'Premium', (Triphammer UK) It's got a silky rich syrupy sweetness on the exhale with tons of mouth feel, you can feel it on the front & sides of your tongue, it's not 'in the recipe' because it's across the board from single flavour fruits to simple bakeries & deserts, so I've deduced it must be an ingredient and/or additive.
I've tried pure Sucralose, mixed 3g per 5ml, it doesn't dissolve, makes your liquid cloudy & just tastes like artificial sweetener, horrible stuff. I've used EM, TPA Sweetener & Cotton Candy at 1-10% + Steeped, but they just don't have the thick rich syrupy sweet mouth feel that I'm looking for
Any ideas on how to create this kind of epic sweetness?
