Can the pins on the mosfet (3034) be cut to size? Will it still function properly?

Yes, the MOSFET pins can be shortened without damaging it's usability as long as ou have enough left to solder to. The center pin on most of the common parts is tied to the heatsink tab, which means you can use the tab instead of the middle pin for most models.
