I've met John a few times, he cooked for a fundraiser I was involved with a few years back. He's not only a gifted chef, but, one of those people that likes to share his knowledge.
I worked for emeril at demonico's, can't really get a read on the guy, none of the menu there was his, he bought the place to save it and knew better than to change the menu. lol

World of difference in the ol workplace tonight. Actually quite pleasant! I've had time to check up on you guys, did a little shopping around for some more flavors for my ever growing stash ( like I need more!). Ehhh, guess I can sell the ones I used three drops of and didn't like. On a happy note,,, I got my steamboat the other day. Today I got my wire, cotton and ohm meter,,, a coil jig is on the way but did I have batteries for the ohm reader???? Well of course not. Who doesn't have a bunch of AA batteries hanging around???? Well me I guess. And I HATE going out in the snow for one stupid thing. I won't have time to play with it til Saturday anyway. Besides, I have to do some more research,, how many wraps and that kinda stuff. Where's Pete and the coffee???
