Cinco de Mayo celebrates when the Mexican army did some serious damage to the French Empire occupation forces, which tried to take over Mexico. It didn't get rid of them just at that time, but it began the gradual breakdown of French occupation efforts, which eventually ended in complete withdrawal of the French from Mexico.

The French did leave some excellent culinary traditions in Mexico. You can get better French cuisine in Mexico than just about any other country other than France.
