I'm working, working, working... I guess I've become that boring person who does nothing but work.

I stopped in the vote likes, loves and laughs, but gotta go.

Wofie, my good thing for today is that I'm getting Doordash because I deserve Doordash. I've earned it, ate up the good fresh food in the kitchen until yesterday, no time to cook today, so it's Doordash.

Wow, that sounds delish. Would love to know the recipe, if it isn't top secret.

Just mix up what ever is your favorite unsweetened pancake batter and add grated Parm, garlic powder or fresh minced, salt and pepper, and shred up however many zucchinis you want. Mixing in one or two eggs to the batter adds to the puffiness. Fry them up just like pancakes and serve with lemon wedges. I don't have exact measurements, I just do it by eye as I've been making them for over 40 years. It's a recipe my mom found in a magazine somewhere.
