What are your secret ingredients to make flavors POP!?

I find that to make certain flavors pop or to enhance a specific flavor, I find the need to add a secret ingredient to make it more believable.
I like to add a little Dragonfruit to make my Strawberries pop.
I also add Pear for a better tasting Red Apple.
A touch of Lemon removes that earthy flavor from Lychee.
What else makes your flavors pop? :)

INW cactus with fruits. Adds a hard to describe flavor. Kinda brings out sweet, mysterious, candylike.

FA Fuji to kinda brighten/crisp/freshen other flavors.

Acetyl Pyrazine, TFA Red Oak, TFA Hickory, FA Black fire to enhance tobaccos.

I just ordered red oak, I didn't know it could do that to desserts. Thank k you for the tip. Does cactus taste like cucumber? I haven't tried cactus before.
