Ever worked in a professional kitchen? If not don't, you'll end up hating cooking at home. It's my passion but I don't really cool outside of work anymore, I will for guests of the wife but most the time she cooks(she's a chef also).

I did and it fucking SUCKED.
I did prep work for one chef, it did not end well... he could not keep his hands to himself.
I would, and could not work full time with food I would stop cooking.
A food cart maybe if I was out I would be done kind of thing.

I should say cooking healthy is easy.
You can trick your taste buds into thinking all sorts of stuff.

I did a cucumber salad that you would have thought had mozzarella in it. Was mushrooms and olive oil with some greek yogurt.

fiddling around with medium chain and long chain fats without having to delve into animal products is kind of fun.

I would, and could not work full time with food I would stop cooking.
A food cart maybe if I was out I would be done kind of thing.
The wife and I have actually talked about doing a food cart or something like you'd see on that stupid show "Diners, Drive-ins and Dives". A place for locals, serve only a few simple things but put everything into those dishes and make them insanely amazing.

Knew a Chef in a high end place. He worked 18 hours A day. Super wealthy. Died @ 39.

I did those for a while, left and went onto greener pastures. I'm not even 30 yet and have the back of a 60yr old, my wife's 27 and already needs surgery for her carpal tunnel. The industry beats us up but if you love it you learn to deal.

I do have the chefs callous on the finger from the knife.
I got jiggy with some beet juice and made a fairly close sweet n sour sauce that an old closed place did.

Voodoo doughnuts.. kind of over rated but DAMN the bacon maple, the chcolate pebble and peanut butter captain crunch are good. they got busted for the voodoo doll doughnut for putting robatussen in the filling.

Had to ditch out last night with a wild headache.

Honestly I am a coffee snob, but for daily drinking joe is folger's Brazilian. I know but it is the best we found that is lower acid and not chew up our guts.

So I went and set up the coffee maker. Of course, in the middle of measuring the coffee out, my wife distracts me. I think that I got it right, but told her that if the coffee did not come out right, that she was to blame. I close the lid and the coffee started brewing. When I poured the coffee into the cups, it looked REALLY weak, and was the color of a cup of tea. I was like "WTF?!".....Don't tell me the coffee maker is broken!:mad:. My wife picked up the cup and said "it's NOT even hot". We have a BUNN coffee maker. I looked on the side of it, and the HEATER SWITCH was turned OFF:rolleyes:. I didn't shut it off.....my wife didn't shut it off.....my kid didn't shut it off.....so.....that means that when my brother was here yesterday, HE turned it OFF. UNBELIEVABLE!......It's NOT a power switch, it's the switch for the heater that keeps the water HOT in the tank (24/7/365). Don't you just HATE when people TOUCH things that they have NO business touching?!:mad:......Dammit!.......That was a waste of some expensive coffee:rolleyes:. WAIT til I call him later!:mad::mad::mad:

He'll probably either deny that he shut if off, or just plain NOT remember doing it:rolleyes:. It's typical for him....since he has a back injury, is on pain meds., and doesn't sleep much:(. Feel bad for him, but COFFEE is COFFEE.....and ya don't mess with a man's coffee:mad:.....(or turn off switches that are meant to be left on, and he shouldn't have been touching that switch in the first place;)).

Coffee snob here too:rolleyes:. If I go out for coffee, it's either Dunkin' Donuts coffee, or no coffee at all. At home, I ONLY use Tim Hortons (from Canada). Since 1998 (our first trip up to Ontario), we got SPOILED since we discovered it. The prices have gone up ALOT in the past year:mad:, and I'm always on the look out for a sale on it. Found a sale a couple of weeks ago, and stocked up and got (6) 32.8 oz. cans:D.

Not a lot to say today, so everybody shake your juice bottles or your ass and get moving. Me I'm taking my butt to bed, 12 hrs of getting yelled at and people getting in my face and all i can do is compose myself and ask them as nicely as I can to get out of my face, which usually consists of asking them if they need a tampon and they need to stop their crying. Man I love dealing with whiny prisoners. Gheesh, why do I gotta be so nice? Love y'all.

I beat a motherfucker one time who kept stealing the first cup out of the brew cycle... I made 4 pots and he he took the first 4 cups ruining the entire pot.
he did not want to pay me the 15 bucks for the lbs of coffee used. beating commenced.
The coffee is FREE at work, and that's about the only thing.....(with the exception of the abuse that we take). That being said.....MOST of the people @ my work will drink ANYTHING. I swear, if they were giving away bags of shit for free.....they'd take em' :rolleyes:. The Ecuadorians that work there ACTUALLY have empty Tupperware containers in the cabinets @ work. If there is ever ANY food provided by the company or others.....they SWOOP right in, and fill them up to TAKE HOME for themselves.....BEFORE anyone else can even take any to eat "right then". UNFKNBELIEVABLE!:mad:
