Good afternoon Family :wave:
Tough day today, did the shoppin errands:facepalm:. I go with Jean a lot but was just along to carry and keep her company but today was an experience, first time shoppin for groceries alone since 1974:facepalm:. She made a list and what usually takes her 3 to 4 hours took me most of the day:(. I was in the some isles at least 6 times:rolleyes:, looked like the amature shopper. Couldn't get the self checkouts to work right and hadta get help. I think I hobbled 4 miles through endless isles:facepalm:. I am so glad to be back home, supper cooked and in a while have to changes Jean's dressings
I am actually learnin to cook a few easy things:giggle:, I have only toasted one pan so far and that's very good for me:rolleyes:.
Hope to catch you all here sometime soon.;)

Some say it's better to be the one taking care of the other than the other way around, even as tough as things get. I pray God grants you all the physical and mental strength it takes to get through each day. Know that several members here have needed to take care of family members, myself included. We know it is not easy, and can be a struggle. Don't ever forget to take care of yourself during this time.

Speaking of charred pans, it took a couple years before I got Phillip to use settings below maximum high on the stove and in the oven. Medium works pretty well on our gas stove. I later found out his entire family was guilty of flash-cooking everything on high heat, burning food, pans, spatulas, and you name it. It's a good thing our stove is in the kitchen island instead of against a wall. Less chance of losing the house over a mishap. A little margarine melted onto pan surfaces helps to an extent as well. If you are using cast iron, just use cooking oil on those. Never use soap on cast iron.

Jimi, I'm sorry I'm so slamming busy with work I haven't had time to play on the forum, but I do have some suggestions for this time when you're trying to care for your love, keep up the daily meals and housekeeping, tend to your garden, and all the other responsibilities falling on you alone at this moment.

There is this thread I just noticed a few days ago, that seems to be about mutual support in crisis situations:


For shopping/cooking, is East Peoria off the delivery grid? People don't like to waste money on delivery fees and shopper tips, and I get that. I prefer to get into the stores and see what there is, choose the best looking produce and make the minute decisions myself, but when I'm working 14-16 hour days, to the point that my feet are swelling from sitting on this imperfect desk chair, I have to take advantage of delivery sometimes.

Instacart does groceries, but lately I prefer Doordash for some groceries. Doordash started out as restaurant delivery, but now they deliver groceries from Target and Sprouts. Walgreens and CVS too. I don't know if you have Sprouts up there, but they're kind of like Whole Foods only ten times better. First I got one free delivery from there (still paid the shopper tip, but no delivery fee), then next I got 10.00 off my order. There seem to be better delivery deals on Doordash than Instacart. Anyway, Sprouts has tons of organic produce and good prices. Recently I've been getting the net bags of five organic avocados for 5.00 per bag, organic tomatoes for 1.25 a pound, the three packs of organic romaine at a good price, organic strawberries 3.98 for the large box (not the little pint basket).

I know delivery isn't going to be a way of life for you, but during a pinch you deserve the time to enjoy the birdsong while things are popping through the soil in your garden, while handling the additional responsibilities you have, rather than marching up and down grocery aisles for hours and hours.

For cooking, my suggestion is: don't scorch the pans. Don't turn on the stove. Relax into the beautiful produce in the stores. Make big cold salads with the protein of your choice added. I know you're a clean eating vegan, but you're already self educated on how to choose ingredients and make dressings and sauces. See my strawberry dessert in the cooking thread. I haven't yet remembered to buy cacao nib powder, but you have it, and you can give Jean a tray of organic strawberries and cacao nib dipping sauce. Or your medjool caramel. Keep it simple, raw, fresh, organic. I know you know how to make potato soup too, and smoothies, oatmeal with fresh berries and walnuts. Mmm, cold potato soup with vegan sour cream and snipped chives. That's my advice. Go with what you know.

EDITING to add: If a careless shopper brings the wrong thing, like non-organic lettuce when you specified organic, they either give you a straight refund, or a credit to your account for your next order. The shoppers are pretty careful, and when making out your order you can list a substitution you approve for each item, but if a mistake is made, you're not paying for it.

Another EDIT: I saw a recipe online for chocolate dipping sauce made from cacao nibs powder, coconut cream and maple syrup. Yummmm.

If I have time tonite I'll write out a couple of easy summer veggie dishes w/ vegan protein additions in the cooking thread, but if not, then search online for spaghetti squash with cherry tomatoes and vegan mozza balls. Look for vegan pesto sauce in your grocery listings. One of my local grocery stores makes it under their own label and it's soooooooo good. Or you can make your own in your food processor.

I love that show, good clean humor

I gotta say, I hate the show. They put on reruns of the series on one of the "vintage" channels now and then. The situation comedy is always about Lucy making an ass of herself. Ricky does everything for her and loves her, and she interferes in his career and makes his life a living hell.

But I adore that opening theme with the insane Cuban percussion, which nods to Desi Arnaz' musician and bandleader skills.

See @DogMan, @SteveS45, @gopher_byrd, @Mr_Nobody, @Smigo who started the cooking thread (gone to the outback but never forgotten and I hope he'll be back someday), @Walter Ladd, @CaFF, @Burnie, just to name a few.

And your own creations Jimi, have been very inspiring to me.

Thank you my friend :hug: , my biggest downfall is starting something and forgetting about it. One time I was pressure cannin food and forgot about it, 3&1/2 hours later it dawned on me :facepalm: , lucky it didn't explode. But you're right, most men do try to hurry things along:rolleyes:

Thank you, but those were just when I was lucky enough to make something edible :giggle: Jean has done all the cookin (inside), even some I have posted.

Good evenin Family:wave: Got up late this mornin slept till 5:30:facepalm:. Got up said my mornin prayers, did an hour of breathin exercises, did my physical exercise, then thought, so I could hear Jean if she called, I would bring my rebounder into the house and do my 15 minutes on it. (fro anyone who doesn't know what a rebounder is it's somewhat like a small trampoline but gives you much more of a work out when you use it). I started to jump and after about 10 minutes I got distracted and got outta balance. Well to make a long story a little shorter I am now doin everything from crutches. I came down on a very heavy duty fan and broke a toe ( thank God that was all I broke. I looked at my toe and the end was at an right angle (about 45 degrees) to the other half.
Luckily I am prepared for this, we have 2 sets of crutches.
Here in this area the only place that does x-rays is the emergency room and it ALWAYS takes 12 hours to get in checked out and back out so I hadta set it myself. It hurt so badly doin that that I'll admit I actually peed myself a little. I don't think I have got it right but it will haveta do, couldn't afford to leave Jean alone that long and a bent toe don't matter to me if it quits hurtin so bad. Luckily I had some vicodon.:)

I hope everyone is doin much better than I am:facepalm:

Jimi! Don't make me come up there. Pain is an indicator, so if it subsides you'll probably be okay but if it doesn't, or it gets worse, you could have a situation that will end up with gangrene. Go get it looked at, or if you know a nurse or doctor who will come over, or a military medic active or retired, do that. If not, then call a a relative to stay with Jean, call 911 for an ambulance and get to a hospital.

They say there are no accidents, and if I say "I hurt myself", literally I have hurt my self. I know you are stressed. I know you are worried. You may be scared. I will burn a candle for you. Everything will be alright some day soon, but just as they tell you to put the oxygen mask on yourself in an airplane before putting one on your child, you have to look after yourself before you can properly take care of Jean.

May all of your trials soon be over.

As for the low fiber diet, I found this page. I'm surprised to see green beans on the "can eat" list, since they have the fibrous strings, but I was thinking any convalescent diet would allow mashed potatoes, tomato soup and simple things like that. Anyway:


And you can simplify your work with the packets of organic pre-cooked rice (white rice per that Mayo Clinic low fiber diet) that you just moisten in the pan and bring to temperature, and with grocery store deli pre-made foods. Cooking on crutches can't be much fun.

OMG Jimi- That is what I was worried about, you getting sick or hurt. Isn't there a visiting nurse that comes daily to check on Jean? There should be, make arrangements for that. Let her or him(nurse)know you need help with cooking and cleaning too, there are elderly services in your community, call them. There are resources out there to help you and Jean.
Call the Dr and arrange for a visiting nurse is the 1st step. Get your foot looked at by a Dr, next step.
I am so sorry that all this is happening to you and Jean, there is help , but you need to ask for it.

Pain is a little less today but when I take the tape off my toe is still at an angle, gonna have the home nurse that comes to give Jean injection today if she'd look at it. I an gonna feel like a big barefoot dummy when I tell her what I did :facepalm:

Thank you my friend:hug:, this one was my own stupid mistake, got carried away:facepalm: Wont be able to get back on that for weeks. Yes the nurse will be here today at about 3 to 3:30 so I'll know then what she thinks but the all say to go to the hospital and I just ain't a goin. Jean's sister is gonna come over and cook for both of us, so much difference in our diets. When my toe feels better I'll be able to handle it. I can make stuff that Jean likes but can't eat any of it so haveta cook two meals:rolleyes:

I'm glad you're feeling better, and glad some kind of medical professional will be looking at you.
