sad news, we had to euthanize our chocolate lab Mattie. She was 14 with issues, the last few days some seizure like things and not being able to get up, it was obviously time. Were pretty sad here.

back to our usual craziness 😘

Sorry to hear that. Mattie will be waiting for you to cross the bridge. My dog and cats send their condolences.

Knuckles? Does Turkey have a taste of its own?

Couple of things.
It does have a taste of its own.
You can’t over herb anything…in my opinion.
American turkeys have wings and drumsticks. That might be possum….lol..or a turkey breast. Turkey and chicken breast are my least favorite parts unless they are pounded out flat with a tenderizing mallet, breaded and fried. Give me a wing and a leg. But that does look very good. Make a sammich with it…mayo and ketchup. Turkey sammich is about the only thing I will put ketchup on.

Throwing a pork loin on the smoker tomorrow. Experimenting on creating awesome bark. Got the loin under rubbed and vacuumed sealed for the night.
over rub in the morning and some experimental bark creator.
apparently the boss wants wings….3 different ways….so 3 big flat$ of wing$ to do also. Fried carrots on the side and something sweet and gooey to finish it off.
Heartburn and weight gain on Sunday.

I have my sister coming tomorrow

Mixed fish skewers with Barramundi, snapper, salmon, and flathead

Stuffed baby capsicum. Which I believe is bell pepper to yanks

And roast asparagus and Brussel sprouts
Don’t know barramundi.
Is that a gold fish?
Don’t eat gold fish.
I could look barramundi up but it’s easier….on me….if you just tell me.

They sell it at Costco here. My wife bought some and it is a little fishy. Ahi, salmon and snapper are my favorites.

Thats perfect. And I really like Ahi. Salmon if it’s blackened and don’t think I’ve ever had snapper. Being a landlocked midwestern boy we get carp, bullhead and on date night we splurge on a catfish. We love our bottom feeders.

Baby peppers

I mortar and pestled garlic, Chives, Parsley

Crumbled fetta. Kalamata olives

It is just sleeping a while to develop flavours
I’ve been eyeballing a molcajete (mortar and pestle) for a while. Think I’d use it often but not sure. I do know that pulverizing certain things like fresh herbs will release oils and such that chopping or grinding won’t. Think it would be fun to play around with…..cuz I just don’t fool around in the kitchen enough.
my pork loin turned out very good…moist and tender. The bark wasn’t as magical as I hoped but was still pretty good.
