Spa resort lunch is ready, available via room service or in the dining room. Today's spa mex lunch is also served in a picnic pavilion by the river, held private to Jimi's group of friends. It features vegan and vegetarian choices, as you prefer.

We have vegan mango chili, street corn salad, taquitos of jackfruit and/or spinach artichoke, guacamole for dipping, an ultimate hot bean dip with freshly made tortilla chips, and a mildly sweet cake made of almond flour.

Yes, I was taking a walk by the river when you went for that early serving of the fruit salad. I heard screams coming from the kitchen, "bear, bear!".

You'd think by now the staff would be used to seeing a bear, a dragon, a gopher and a wolf free ranging around the resort, but I guess they didn't expect to have you come into the kitchen for food.

Breakfast today is our last meal together before we have to check out of the resort and head our separate ways home.



I dare hope Jimi's health has been bolstered by this time we have shared, the activities, the spa treatments, and the fun of being with friends. Maybe Jean got a boost too. Jimi will have to let us know.

Here is what we'll enjoy for our last wellness spa resort breakfast:

Almond flour pancakes. Nobody knows better than the kitchen's genius chef how to make them light and fluffy. Those who want eggs will have them fresh from the chef's organically raised chickens, cooked to order. We'll have more of the kitchen's signature tomato toast, more of the ever popular avocado toast, breakfast potatoes, and fruit granola parfait cups. All with varieties of coffee, tea and fresh organic juice, for our final celebration of friendship and the sweetness of life and health.






Take a long look around before you teleport out. We may never again experience beauty like this together, or enjoy each other's company as much as we have over this very special early spring weekend.
