I have wanted to make a "pear split" flavor, that is pear and vanilla. I live in Sweden and here one has been able to buy a ice cream on a stick for probably 20 or 30 years by now that I want to re create, I met a dude once whom had made a juice that tasted like that but with a prominent added flavor of some cereal which I didn't care for at all.
But I have no idea who this guy was, anyway, I have tried a couple of pear flavors, INW, TPA, FA and FW and I have played around with pear(mostly FA) with vanilla flavors but I haven't been successful.
I am not sure how to explain what I want but let me describe the ice cream(I am not interested in vanilla bean Ice cream or similar vanilla flavors nor any custard flavors, I don't experience them to taste anything like what there names suggests, they are actually quite horrible in my mouth and the only nice thing with them all is that acetoin creamy flavor which all acetoin flavors contain).
The ice cream is a vanilla ice cream which is coated in a thick layer of green pear "ice" ice cream, don't know what it os called in English but generally ice cream contains dairy products but the outer layer is one of those non dairy ice cream, similar to what you get when you freeze water and strawberry juice or something.
So the pear is very juicy and has a nice "fruity" kind of flavor, I wouldn't say sour but you now that nice feel that such Icy ice creams has during a hot summer day, and the vanilla flavor isn't very prominent but it adds a nice background to the pear favor.
All my attempts has turned out to taste pear but the vanilla doesn't get along with the pear at all, it's as if they hate each other and refuses to play nice.
Next I will try pear with nothing but vanillin, as vanillin is a good friend of fruits, I believe, flavors like strawberry and blueberry doesn't get along very well with flavors like Vanilla Swirl(TPA) or Vanilla Classic or Vanilla Tahity from FA I find but vanillin does get along with those flavors very well.
That's how my mouth works anyway.
Does anyone have any ideas/suggestions?
