Farro Salad
(full recipe in this email below)
If you’re someone who hears the word ‘salad’ and immediately fears an unsatisfying, less-than-filling meal, have no fear! This protein-packed recipe is here to change your mind.

This recipe for Farro Salad is super easy and lends itself to include any vegetables you may have in your fridge or pantry. To better absorb the flavors, cook the farro in water with lime juice, Mexican spice, and cilantro.

Farro is an extremely nutritious grain that makes a great alternative to rice or other grains. It is a great source of fiber, iron, protein and magnesium. With all of those nutrients in this little grain, it can provide a lot of health benefits for your diabetes or for heart and brain health.

Farro is a much healthier alternative to white rice or other refined grains. One-fourth cup (47 grams) of organic, whole grain emmer farro contains plenty of fiber (5 grams) and protein (6 grams) in exchange for just 34 grams of carbohydrates.

Adding some farro to your diet will give you a healthy dose of zinc, magnesium and vitamin B3 (niacin), all of which play important roles in your body.

It also helps regulate blood glucose levels and is linked to improved insulin sensitivity. So don't overlook this powerhouse of a salad!

Farro Salad
Ingredients:
  • 1 cup cooked farro
  • 1 tbsp lime juice (or 1/2 lime)
  • 1 tbsp Mexican spice
  • 1/4 cup cilantro
  • 1/2 cup corn frozen
  • 1/4 cup salsa use your favorite heat level
  • 1/2 bell pepper or hot pepper
  • 1/2 red onion thinly sliced
  • 1/2 cup low sodium black beans
  • 1/2 avocado sliced
Directions:
  1. Add lime juice, Mexican spice, and cilantro to cooked farro and combine well. Place the farro mixture into a bowl.
  2. Around the farro place corn, pepper, onion salsa and black beans.
  3. Stir everything together before eating.

Summer weather is here! It is time to get outdoors.

Here are some facts:

1) Sunshine has gotten a bad rap.

For years we were told that sunshine was basically poison and was going to cause cancer. Well consider this: the top three states for skin cancer rates per 100,000 residents: Utah, Vermont, and Minnesota. Not exactly the sun belt is it? And while I don’t advise getting sunburns on a regular basis, there are mounds of evidence that the sun does far more good than we’ve been led to believe. And, in a shocking twist, there are new studies correlating cancer to vitamin D deficiency. Can you guess why many people are vitamin D deficient? You guessed it: a lack of sunshine.


2) You’ll sleep better.

From a recent study at the University of Toronto: “Spending prolonged time outdoors helps align your body to natural day- and night-time, which is useful for strengthening the hormone signal melatonin that’s responsible for those feelings of sleepiness you get in the evening.”

3) Boosts brain health.

From a recent study in South Korea: “MRI scans showed that when subjects saw images of mountains, forests, and other landscapes, they experienced heightened activity in the anterior cingulate gyrus (which is linked to positive outlook and emotional stability) and the basal ganglia (an area that’s been tied to the recollection of happy memories).”


4) Your mood is always better outside.

A study found that students sent into the forest for two nights had lower levels of cortisol — a hormone often used as a marker for stress — than those who spent that time in a city. In another study, researchers found a decrease in both the heart rates and levels of cortisol of participants who spent time in the forest compared to those in the city. (My educated reaction to these studies: well duuuuhhhhhh)

Besides, the outdoors, sunshine, and exercise are all great at boosting your most important defense for corona: your immune system!!


So get outside! Even if it’s hot, muggy, windy, or rainy; your body and your mood will thank you...

Pain Treatment After Surgery

National Basketball Association (NBA) players must frequently deal with injuries. As a result, they often have to contend with post-operative pain management and the challenges of rehab if they're going to get back in the game.

That's just like the 1.77 million people who will rehab this year from a knee replacement, rotator cuff surgery or hernia repair.

But there's a catch, according to a study presented at the Scientific Summit of the American Pain Society. For everyday athletes, it's difficult to get the post-op pain management you need in order to heal rapidly and endure rehab.

That's because too often nurses take you at your word when you rate your pain level. According to one of the study's authors: "We're sometimes fixated on this number scale. ['Please, rate your pain 1 to 10.'] ... We really need to go back to that patient and say: 'Are you satisfied?' 'Can you tolerate this for a long period of time?'"

Generally, that's not happening, so you or a family member should be prepared to give more information to your nurses. ("It's OK now, but it won't be if it persists.")

Then you'll get more effective pain management (usually not narcotic-based), heal faster, and require less pain medication in the long run.

So choose words that empower you, make you believe in your abilities, and keep you moving forward. Feed the positive beliefs so they can grow stronger.

Take care with your words as they cannot be unsaid. Practice filtering your thoughts before you speak them.

Even a single sentence can have a huge impact on someone’s life.
