Caramelized Broccoli Steaks with Tahini Lemon Drizzle​

This show-stopping dish elevates broccoli to centerpiece status while delivering essential calcium and vitamin K for stronger teeth and bones. Rich in antioxidants that fight inflammation, it pairs perfectly with quinoa or farro for a nutritionally complete meal.​

Serves 2 as a main, 4 as a side

Ingredients:

For the Broccoli Steaks:

  • 2 large broccoli heads with thick stems
  • 3 tablespoons olive oil
  • 3 cloves garlic, thinly sliced
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon red pepper flakes (optional)
  • Sea salt and freshly ground black pepper
  • 2 tablespoons pine nuts

For the Tahini Lemon Drizzle:
  • 3 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 1 small clove garlic, finely grated
  • 2 tablespoons water (more as needed)
  • 1 teaspoon date paste
  • Pinch of salt

For Garnish:
  • 2 tablespoons pomegranate seeds
  • 2 tablespoons roughly chopped fresh herbs (parsley, mint, or cilantro)
  • Lemon zest
  • Flaky sea salt
Instructions:
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. To prepare the broccoli steaks, trim the leafy ends of the broccoli stems, leaving about 2 inches of stem attached. Place each head stem-side down on a cutting board and slice vertically through the head to create 3-4 "steaks" about ¾-inch thick from each broccoli head. (Save any florets that fall off for another use.)
  3. Arrange the broccoli steaks on the prepared baking sheet. Brush both sides generously with olive oil. Sprinkle with sliced garlic, smoked paprika, cumin, red pepper flakes (if using), salt, and pepper.
  4. Roast for 15 minutes, then carefully flip each steak. Sprinkle with pine nuts and continue roasting for another 10 minutes, until the edges are crispy and caramelized and the stems are tender when pierced with a knife.
  5. Meanwhile, to make the tahini sauce, in a small bowl, whisk together the tahini, lemon juice, grated garlic, water, date paste, and salt until smooth. If the sauce is too thick, add water a teaspoon at a time until it reaches a drizzling consistency.
  6. Arrange the broccoli steaks on a serving platter. Drizzle generously with the tahini sauce, then scatter pomegranate seeds and fresh herbs over the top. Finish with a sprinkle of lemon zest and flaky sea salt.

We recently heard of the tragic passing of a 22-year-old woman, Haley Furguson, who died of cervical cancer after receiving the Gardasil vaxx.​

How to Support Our Vision Health with Aging
Hey there Jimi,

Aging is inevitable! And yet, we can let it happen gracefully, or experience it as a constant challenge. One aspect it affects is eyesight. Some of the most common eye conditions are age-related macular degeneration (AMD), glaucoma, cataracts, and dry eye syndrome. Although on the rise, there are various natural tools to use as prevention and support vision long-term. Below are a few of the most efficient nutrients to include in your overall wellbeing routine.

Lutein and Zeaxanthin

Both carotenoids are naturally present in the retina, which is located in the back of the eye. They are powerful antioxidants, because they protect against oxidative damage and mitigate the harmful effects of blue light. Thus, they may contribute to slowing down AMD and sharpening vision in low-light settings.

Food sources, rich in lutein and zeaxanthin to include in your diet are leafy greens (i.e. kale, spinach, collard and mustard greens), broccoli, Brussels sprouts, sweet corn, orange and red peppers, etc.

Omega-3 Fatty Acids

Long-chain omega-3 fatty acids, particularly DHA and EPA, are an indispensable part of an anti-inflammatory lifestyle! But how do they affect vision? As the retina itself contains high concentrations of DHA, both omega-3s may help reduce the risk of AMD, glaucoma, and dry eye syndrome.

Natural food sources are chia seeds, flaxseeds, walnuts as well as algae, which is a great plant-based option of both DHA & EPA.

Vitamin C

A potent antioxidant that protects the whole body against oxidative stress, vitamin C may also reduce the risk of AMD and cataracts, while boosting collagen production – an important component that gives structure to the eye.

Great vitamin C sources are leafy greens vegetables, bell peppers, broccoli, Brussels sprouts, citrus fruits, strawberries, cantaloupes, etc.

Zinc

This mineral is not only vital for immune health, but it also appears to play a fundamental role in maintaining optimal eye function. Why? Because it may slow the development of AMD, vision loss and blindness.

To benefit the most, make sure to enjoy on a regular basis pumpkin seeds, chickpeas, lentils, cashews, and alike.

Vitamin A

Vitamin A is another nutrient that may help prevent cataracts, AMD, and night blindness.

Although deficiency in this vitamin is rather rare, it’s advisable to regularly eat sweet potatoes, leafy greens, pumpkins, and bell peppers in order to ensure sufficient intake from diet alone.

Apart from proper nutrition, what else can you incorporate into your daily routine to take good care of your eyes as you age?

Here are a few tips to consider:

Chronic dehydration could result in blurry vision, and dry eyes at the least. So, keeping a full glass of water by your side is a great way to begin, but it’s not a solution unless you take those sips.

Prolonged screen time is a real threat because it may contribute to digital eyestrain, and myopia, also known as nearsightedness. To tackle this challenge, set a reminder on your phone to get up from your laptop at least twice an hour. Go to the window and look far away for 20 seconds.

Sleep deprivation makes your eyes more vulnerable to infections, twitches, light sensitivity, and blurry vision. To help eye tissues repair, aim for 7–9 hours of sleep each night. Yes, weekends included.

Regular workouts may improve blood circulation and oxygen delivery to the eyes, while lowering the risk of glaucoma.

Lastly, quit smoking! This habit has the opposite effect of what exercise does for you. It actually limits blood and oxygen flow, which can negatively impact the whole body, including your eyes.

Aging is expected to cause changes in vision. However, if you mindfully choose to nourish your body with the right nutrients, exercise regularly, sleep and hydrate properly, and reduce screen time, you can enjoy good eye health at any age.​

New GMO Alert: Get Schooled on Gene-Edited Fish in Japan

While AquAdvantage, a genetically engineered brand of salmon developed by AquaBounty Technologies was not ultimately a market success (production facilities were closed for good last December), the aquaculture industry has not given up on genetic engineering. While the fortunes of AquAdvantage salmon fell in North America, three new GM fish were approved to enter the market in Japan.

Fish is big business in Japan, where the average diet includes seafood daily. Japan imports about half of its seafood from China, Chile, Russia and the US. With wild fish stocks steadily declining, aquaculture operations provide the remainder. Read more here about the three new genetically engineered fish to hit the market.



They're coming for your kids! – GM Arctic apple​

Apple Arctic recently debuted a new mascot with kid-friendly packaging. A rollout of new 2-ounce GMO Arctic apple packaging in schools and foodservice channels nationwide is planned for this spring, featuring "bold, playful colours" in bright "kid-friendly packaging" plus "Artie", their new mascot. The GMO Arctic apple slogan is "Keep an eye out for Artie!" We think you should. Tell your kids to avoid Artie and his genetically engineered apples, which are pre-sliced and sold in plastic packaging. Fresh non-GMO apples are widely available and don't need to come wrapped in plastic! This statement shared by our friends at GM Watch is one that we are in total agreement with.

Turning waste into food: scientists transform whey into sustainable protein

Scientists from Tecnológico de Monterrey have discovered a groundbreaking way to transform whey waste into sustainable single-cell protein, offering a nutritious and eco-friendly alternative to traditional protein sources.

Their research converts whey, a byproduct of cheese production, into single-cell protein (SCP) using microbial fermentation. Every year, millions of tons of whey are discarded, polluting waterways and wasting valuable nutrients. Whey waste is a major issue for the dairy industry, with nearly half of all whey produced being discarded. In Mexico’s Veracruz and Chiapas regions, over 100,000 liters are dumped daily, depleting oxygen in rivers and harming aquatic life. This new solution helps repurpose waste while reducing environmental damage.

This new approach uses precision fermentation to break down lactose in whey and convert it into protein-rich biomass. It harnesses natural microbial communities, including yeasts and bacteria, avoiding genetically modified organisms (GMOs). Learn more about this innovative process here.


Certified Naturally Grown Offers Small Farms Alternative to Organic Certification

Small farmers seeking eco-friendly certification without the high cost and paperwork of U.S. Department of Agriculture’s organic certification is turning to Certified Naturally Grown (CNG), a nonprofit-backed alternative. CNG offers an affordable, peer-reviewed certification system for farmers committed to chemical-free practices. CNG’s standards mirror organic certification, requiring natural fertilizers, eco-friendly pest control, and humane animal treatment. Unlike organic certification, which requires extensive record-keeping and costly third-party inspections, CNG relies on peer reviews, reducing costs to $250 annually compared to USDA organic certification fees of $2,000–$3,000. These words are taken from the book Sastun, written by our friend and legend in her own right, Dr. Rosita Arvigo. The dialogue is from a conversation Rosita had with Don Elijio one morning while they were out collecting herbs in the jungle:

Don Elijio stopped before a bush. "Xiv," he said as he pulled off its leaves and tenderly stuffed it into his sack. With each yank of a stem, he muttered under his breath.

I asked what he whispered while he snipped off the leaves.

“The ‘ensalmo.’ You must learn many," he said, as if I knew what he was talking about. I was surprised that despite my fluent Spanish, I had never heard the word before. I thought it might be a prayer, but I thought better of asking.

Instead, I asked Panti why he did the ensalmos. He stopped walking and looked at me sideways, shaking his head in disbelief. "It's simple, my child, if you don't thank the Spirit of the plant before you take it from the earth, it will not heal the people. Many people say they gather what they see me gather, but it doesn't work for them. That's because they haven't remembered to say the ensalmo."

It seemed so natural and almost too basic not to have been a part of my thinking before. The plants are living things, and they give up their lives to help us heal. A prayer seemed like a small price to pay for such a gift, I mused.

He repeated the ensalmo for me ever so slowly:

"I am the one who walks in the mountains seeking the medicine to heal the people. I give thanks to the Spirit of this plant, and I have faith with all my heart that this plant will heal the sicknesses of the people…”


Like Rosita said, it seems so basic right? Plants are living beings, we are living beings. When we need help from other beings in our life, we approach them with humility and grace, and ask

Eat a Mediterranean Diet to Lower Heart, Cancer Risks

People living in areas that regularly eat a Mediterranean diet have been found in studies to have lower rates of cardiovascular disease and cancer. And to live a longer, healthier life.
“This is a diet that people can live a long life ─ over 100 years,” says Dr. Chauncey Crandall, world-renowned cardiologist and director of preventive medicine at the Palm Beach Cardiovascular Clinic in Florida.

The Mediterranean diet is based on the traditional eating patterns of people living in the countries, such as Greece, Italy, and Spain, that border the Mediterranean Sea. In general, the diet emphasizes plant-based foods like fruits, vegetables, whole grains and legumes, healthy fats like olive oil, and moderate amounts of fish and poultry, while limiting red meats and processed foods.
“Foods that you can eat off a tree or grow in the ground,” Crandall tells Newsmax’s “Newsline.”

“It's a diet that is proven to give you long life and it focuses a lot on olive oil, which has beneficial properties for long-term health,” adds Crandall.
Research has linked olive oil to a variety of health benefits. One study of more than 92,000 men and women, published in the Journal of the American College of Cardiology, found that those who consumed the most olive oil ─ a little more than half a tablespoon a day ─ had a 19% lower risk of death from any cause over the 28-year study period compared to those who never or rarely used olive oil. In addition, consuming more olive oil was linked to lower risk of death from heart disease, cancer, and neurodegenerative disease, such as Alzheimer’s disease.

The beneficial effects of olive oil come from its antioxidant and anti-inflammatory properties, according to Crandall. Inflammation in the body is a main cause of cancer and heart disease. In addition, olive oil has been found to lower LDL (bad) cholesterol, which contributes to the development of heart disease.
So, people who eat a Mediterranean diet that includes olive oil live longer, have less heart disease, have less mental illness, and have less cancer throughout their life, says Crandall, editor of the popular newsletter Dr. Crandall's Heart Health Report.

In order to live a longer, healthier life, we need to adopt better eating and lifestyle habits, according to Crandall. “We need to eat fresh foods, fresh vegetables, minimal red meat, fish, poultry. We need to exercise,” advises Crandall.
“Another thing about the Mediterranean diet is that we socialize together. We start having dinner together. We start celebrating together. We've lost that in the United States,” says Crandall.
Stay away from processed foods. They are bad for you. They create cancer, heart disease, other inflammatory disorders. So, stay with fresh foods, things that grow out of the ground, off the tree,” emphasizes Crandall.
