Mimicking meat​

What’s stopping you from trying out — or even switching to — plant-based meat substitutes? Often the answer comes down to two things: taste and texture.

Stanford engineers have developed a cutting-edge method using mechanical testing and AI to analyze and replicate the textures of animal meat in plant-based products. By pulling, pushing, and stretching food samples in the market — movements similar to chewing — they measured the textures of eight products. This includes plant-based and animal hot dogs, sausages, turkey, and tofu.

A neural network turned this data into equations describing each product’s texture. Human testers then rated the samples based on 12 texture categories (e.g. chewy, fibrous, meat-like), and their rankings closely aligned with the mechanical test results. Plant-based hot dogs and sausages closely matched meat counterparts, while turkey was stiffer, and tofu much softer than meat.

To accelerate innovation in this space, the team has made their data publicly available for easier collaboration among scientists. This shared resource will eventually lead to the use of AI to design plant-based meat recipes that match consumer preferences.​

However, when the same meal was paired with a high-flavanol cocoa drink (containing 695 mg of flavanols), it prevented this decline in vascular function. The protective effects lasted up to 90 minutes after the stressful event.

Cold Weather Increases Stroke Risk

While it is always important to be aware of stroke symptoms and prevention guidelines, it is even more crucial in the winter as the risk increases with cold weather and the holidays.

The American Stroke Association recently issued new guidelines on preventing a stroke ─ the fourth leading killer in the U.S. Because the majority of strokes can be prevented with lifestyle changes, it is important to take these recommendations to heart.

According to the experts at Northwestern Medicine, cold weather causes blood vessels to contract, which raises blood pressure and increases the risk for heart attack and stroke. Coupled with cold weather, the holiday season can cause stress hormones to rise. The double whammy of chilly weather and stress further increases the likelihood of cardiovascular events.

Global studies have confirmed that the incidence of strokes increases in winter, says the American Heart Association (AHA). A German study, for example, found that for every 2.9-degree Celsius drop in temperature over 24 hours, strokes increased by 11%, and at even higher rates for those at high risk.

Another study from Brazil found that falling temperatures may increase the number of deaths from stroke.

Staying inside all winter to prevent an increased risk of stroke isn’t practical or even recommended, so it is important to follow these tips to help protect yourself:

• Dress for the weather. Wear layers, especially hats, gloves and heavy socks.

• Come inside often. If you are outside for an extended period, take breaks and come indoors.

• Avoid excess alcohol. Alcohol makes you feel warmer than you are and can be particularly dangerous if you are drinking out in the cold.

• Don’t overdo shoveling! According to Everyday Health, snow shoveling has been linked to a spike in cardiovascular events soon after major snowstorms. A major study looking at snow removal-related medical emergencies treated in the U.S. between 1990 and 2006 identified about 11,500 shoveling injuries over the 17-year span — cardiovascular events accounted for half of the hospitalizations and 100% of the deaths. Ask your doctor if it is safe for you to shovel at all.

• Get help. If you have symptoms of a heart condition, don’t wait to get help, even on holidays.

According to The Washington Post, about 80% of strokes are preventable. So, take extra care as the weather gets nippier to:

• Watch your numbers. Manage health issues such as high blood pressure and reduce sodium intake to less than 1,500 milligrams daily. Maintain a healthy weight and exercise regularly. Talk to your doctor about your risk for atrial fibrillation, a condition characterized by an abnormal heart rhythm that affects about 10% of people over the age of 80. People with Afib are five times more likely to have a stroke.

• Eat a Mediterranean diet. Experts say that following a Mediterranean diet that is rich in whole grains, fruits, vegetables, and legumes, plus heart-healthy fats such as olive oil and lots of fish, can reduce your risk of a cardiovascular event like heart attack or stroke by as much as 26% compared to those who follow a low-fat diet.

• Avoid pollutants. A review published in the journal Stroke said that even short-term exposure to air pollution may raise stroke risk. Check the air quality where you live by visiting AirNow.gov. On days with high pollution, limit your time outdoors.

• Control stress. One study found that one stressful life event increased the risk of stroke by 17%, while two raised the risk to 31%.

Stroke experts have coined the acronym FAST to help determine if you or a loved one are having a stroke. F for face, A for arm, S for speech, and T for time. Call 911 right away if you suspect a stroke.

No matter the weather, my family and I are pretty committed to going outside and having a blast year round.

But when you're out under the open sky during the colder months, it's vital to nourish your system with the best herbs, foods and fluids that your budget allows. With that in mind, one thing we LOVE to make in our house is a nutrient-rich, herb-infused soup from the old country.

You can’t really go wrong with broth-based soups when you’re sick, but there are some that work faster and more effectively than others because of the healing nature of their ingredients.

The healing soup recipe below is a real crowd-pleaser that is super tasty and extremely good for you...

Cornucopia Soup

The Italian herbs in this recipe are famous for their ability to open up your respiratory system while soothing the lining of your throat and any chest congestion. The turmeric and black pepper duo work together to bring down inflammation all over your body and both the garlic and ginger help to fight off the presence of any bacterial or viral infections!

Meanwhile, the whole veggies provide a wide range of vitamins and minerals to nourish your body back to health quickly. (While that’s not a guarantee, it has been our experience. We make a big pot full and eat it during any mealtime.)

This delicious soup packs a serious healing punch!

Ingredients

  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 tsp sage
  • 1 tsp basil
  • 1 bay leaf
  • 3 cloves of garlic
  • Ginger (measured to your liking)
  • 1/2 onion diced
  • 2 carrots chopped
  • 2 zucchini chopped
  • 12 oyster mushrooms quartered
  • 3 medium potatoes chopped
  • 1 bunch of kale
  • 3 tbsp olive oil
  • Water
  • Sea Salt (to taste)
Preparation

  1. Sauté onions, garlic, and ginger in olive oil until fragrant
  2. Add mushrooms, carrots, and zucchini. Cook until zucchini is soft enough to pierce with a fork
  3. Add all herbs and the potatoes. Fill the pot with water, until vegetables are fully covered. Bring to a boil and then reduce heat to simmer for about 45 minutes
  4. Add kale. Cover and cook on medium heat for 10 minutes
  5. Salt to taste
Grab a bowl and spoon and eat up all the healing benefits this wonderful soup has to offer!

Here’s why:

Since the George H.W. Bush Administration, the FDA has treated genetically engineered synthetics the same as normal foods, allowing them to be approved without safety-testing or post-market monitoring through the “generally recognized as safe” (GRAS) loophole.

President Donald Trump could change this. His new Health & Human Services Department, which includes the Food & Drug Administration, is expected to be very different from his last.

Here are five GMOs Trump’s new team should take off the market (four are GMOs his old team put on the market):

1. POSILAC – The genetically engineered growth hormone (aka rbGH/rbST) that makes cows produce so much milk their udders painfully swell, causing ulcers that ooze pus into the milk that’s also contaminated with a growth factor (IGF-1) linked to cancer.

2. AQUADVANTAGE SALMON – Salmon that’s genetically engineered to grow unnaturally fast by producing growth hormones year-round. GMO salmon has increased levels of IGF-1, a hormone linked to cancer. It has less of the healthy omega-3 fats than normal salmon and it is more likely to trigger an allergy.

3. IMPOSSIBLE BURGER – Impossible Food’s “bleeding” veggie burger made with synthetic blood that’s spit out of genetically engineered yeast. Preliminary animal lab data submitted by Impossible Foods indicated potential health risks including blood clot issues, anemia, and kidney damage.

4. BORED COW – Perfect Day’s synthetic whey protein, made from genetically engineered microbes. It’s the single ingredient in Bored Cow’s “milk.” Trump’s FDA gave it GRAS status in 2020 even though the whey was contaminated with heavy metals and GMO fungal proteins that are similar to known allergens.

5. LAB-GROWN “CHICKEN” – The Biden Administration FDA made two approvals of what they call “Human Food Made with Cultured Animal Cells,” one in 2022 for UPSIDE Foods and the other in 2023 for GOOD Meat. No one’s eating it yet, because neither company can figure out a cost-effective way to grow the chicken without antimicrobials we shouldn’t eat.
