Vegetable Pad Thai

Red bell peppers contain numerous healthy carotenoids which are found in the colorful flesh of the pepper. They help to improve immune function and decrease the risk of several types of cancer.

Ingredients

8 ounces dried, wide, and flat rice noodles (pad thai noodles)
1/4 tsp raw honey
3 tbsp fresh lime juice, plus wedges for serving
4 tbsp soy sauce or 2 tbsp Bragg’s liquid amino’s soy sauce alternative
2 tsp coconut oil
3 scallions, white and green parts separated and thinly sliced
1 medium onion diced
1 large red bell pepper thinly sliced
1 & 1/2 cup green cabbage thinly sliced
2 garlic cloves, minced
1 inch piece of ginger, minced
1/2 tsp Sriracha sauce (add more if you would like it more spicy)
2 large eggs (optional), lightly beaten
1/2 cup fresh cilantro, chopped
1/4 cup chopped roasted, salted peanuts

Directions

  1. Cook the rice noodles as directed on the package. Drain and set aside.
  2. In a small bowl, whisk together honey, lime juice, and soy sauce.
  3. In a large nonstick skillet, heat oil over medium-high. Add onion and cook until translucent, then add one clove garlic and red bell pepper and stir fry for 2 min. Then add green cabbage and ginger and stir fry for an additional 3 min. Add 1/4 of soy sauce mixture and cook for additional 2 min. Transfer to a plate.
  4. Add scallion whites and garlic and cook, stirring constantly, until fragrant, 30 seconds. Add eggs (if using) and cook, scraping skillet with a rubber spatula, until eggs are almost set, about 30 seconds. Transfer egg mixture to a plate. If not using eggs, just stir fry scallion whites and garlic and set aside.
  5. Add noodles and remaining soy-sauce mixture to skillet; cook, tossing constantly, until noodles are soft and coated with sauce, about 1 minute. Add veggies and egg mixture (or just scallion whites and garlic if not using eggs) and toss to coat, breaking eggs up gently. Add Sriracha sauce and mix well.
  6. Serve noodles with lime wedges, garnish with scallion greens, cilantro, and peanuts.

Prep Time and Cook Time: 35 min
Serves: 4

Yeah there is two places this year, usually about 20 places. Food will become an issue before this is all over.

I don't doubt that....many places should have planted already, but haven't....with the global cooling it'll be snowing before harvest time again.

Did you know over 50% of the US population battles a health condition related to blood sugar? You may not think that includes you, but blood sugar is the stealth ENEMY of your immune system. Click here to attend the Quit Sugar Summit and learn even one tip if you can. ONE thing could change your life. (Like eat protein before carbs to lower post-meal glucose.)

I have watched many of the people I love battle sugar related issues for decades. Sugar is at the root of a myriad of brutal health conditions, including: cancer, diabetes, heart disease and a long list of avoidable health conditions - IF you had the right information.

There are many new strategies and insights around SUGAR that can literally change your life (and your family’s), sometimes almost immediately - and for years down the road.

This is your opportunity to strengthen, enhance and BOOST your immune system, by understanding the role sugar plays in your life… and then learn easy, proven ways to reduce or eliminate it’s control forever!

Sugar is the great mental shell game, feeling good in the moment, but leaving humanity sick on every level. I’ll be speaking about the surprising connection between hypothyroidism, gluten and diabetes.

And the other speakers are a “Who’s Who” of natural healing and diabetes therapies, including superstars like:

  • My good friend, JJ Virgin: Star of “My Weird Addiction” & 4x NYT Best Selling Author
  • Drew Canole: Author, transformation coach, and founder of Organifi
  • Wolfram Alderson: CEO The Hypoglycemic Foundation
  • Eric Zielinski (“Dr. Z”): Public Health Researcher, Founder of NaturalLivingFamily.com
  • Autumn Smith: Co-founder of Paleovalley, certified eating psychology coach and mom
And so many more! I was very glad to be asked to speak on this event and share my wisdom on this topic.

Warmly,
Dr. Tom O’Bryan

PS: Please do not miss this event. This is one of the easiest and most effective changes you can make to support your body’s immune system, so it can protect you.
